What signal does this sensor provide?

The sensor changes resistance with applied force. Use a voltage-divider or signal-conditioning circuit to obtain a voltage suitable for an ADC input.

Does the resistance reading directly equal force?

No. Calibrate the assembled sensor and readout circuit under known loads. Keep contact area, loading position, support surface, and loading procedure consistent with the intended application.
